To assemble the salad, in a large bowl layer the lettuce and kale. Slice the Pink Lady® apple, dates and cucumber and add to the bowl. Top with walnuts, feta cheese and sesame seeds.
To prepare the dressing, in a small bowl, combine the mustard, balsamic vinegar and olive oil. Whisk until blended.
Before serving, generously drizzle with some of the dressing. Serve immediately.
